🍫 Double Chocolate Chip Almond Muffins Recipe
Ingredients:
1 and 3/4 cup all-purpose flour
½ cup unsweetened cocoa powder
¾ cup brown sugar
1 tsp baking powder
¼ tsp salt
½ cup whole milk
⅓ cup coconut oil
2 large eggs
1 tsp vanilla extract
¾ cup semi-sweet or dark chocolate chips
⅓ cup slivered or chopped almonds
Optional: extra almonds and chips for topping
Instructions:
Preheat your oven to 350°F (175°C) and line or grease a muffin tin.
In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
In a separate bowl, mix whole milk, coconut oil, eggs, and vanilla until smooth.
Gently fold the wet ingredients into the dry until just combined—don’t overmix!
Stir in chocolate chips and almonds.
Spoon the batter into muffin cups, filling each about ¾ full. Top with extra chocolate chips and almonds if desired.
Bake for 23 minutes, or until a toothpick comes out with a few moist crumbs.
Cool in the pan for 5 minutes, then transfer to a wire rack.
