Welcome to the very first recipe in our From Scratch Baking Video Series here at Luna’s Coons Farm! This week, we’re starting with a warm and comforting favorite that’s been baked in farmhouse kitchens for generations—Banana Nut Muffins.
There’s something about the smell of fresh banana bread or muffins baking in the oven that instantly brings you back to simpler times. It’s the kind of recipe that fills your kitchen with the scent of love, evokes memories of family breakfasts, and reminds us that good things don’t have to be complicated.
These muffins are a staple in our home, especially when we find ourselves with a few too-ripe bananas on the counter. Instead of tossing them, we turn them into golden, nutty little pillows of comfort. And now we’re inviting you into our kitchen to bake them with us.
🍽 Why We Chose Banana Nut Muffins to Kick Off Our Series
Starting a new video series is always a little nerve-wracking, but we wanted to begin with something familiar, nostalgic, and easy enough that anyone, no matter your baking experience, could jump right in.

Most importantly, they represent the heart of our farm & kitchen: using what we have, reducing waste, and filling our lives with homemade joy.
🧁 Banana Nut Muffin Recipe
Ingredients:
3 overripe bananas, mashed
1/3 cup melted butter
3/4 cup sugar (adjust for your taste)
1 egg, beaten
1 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1 1/2 cups all-purpose flour
1/2 cup chopped walnuts or pecans
Optional:
1/2 tsp cinnamon for added warmth
A handful of chocolate chips
Sprinkle of coarse sugar on top for a sweet crunch
🥣 Instructions
Preheat your oven to 350°F (175°C). Line or grease your muffin tin.
In a large bowl, mash your bananas until smooth. Stir in the melted butter.
Add in sugar, beaten egg, and vanilla extract. Mix until well combined.
Stir in baking soda and salt. Then gently fold in the flour. Don’t overmix—just until combined.
Fold in chopped nuts, or whatever extras you like.
Spoon the batter into your prepared muffin tin. Fill each about 2/3 full.
Bake for 18–22 minutes, or until golden and a toothpick inserted in the center comes out clean.
Cool on a wire rack. Best served warm with a touch of butter.
